The women of the Sacramental Brotherhood of Tomares are serving their traditional pavia dishes of hake and cod on Fridays and Saturdays, until August 8, in the Jardines del Conde.
The traditional pavia dishes of hake and cod, made by the women of the Sacramental Brotherhood, can now be tasted in Tomares every Friday and Saturday until August 8, starting at 9 PM, in the Jardines del Conde, the town hall's venue. This gastronomic event, which began on July 26, has become a summer classic in the Sevillian town and attracts hundreds of locals and visitors each year.
The recipe, passed down from generation to generation, is the best-kept secret of the brotherhood. The pavias are served with a thin layer of flour that makes them crispy on the outside and juicy on the inside. Additionally, this year, the popular “camisetas” can be ordered, a version with less batter, along with other homemade tapas such as potato salad, shredded meat, skewers, prawn montaditos, or the typical “Veracruz” of fillet, salmorejo, and ham, all at affordable prices.
The initiative not only offers a gastronomic plan but also has a charitable purpose. The proceeds are entirely allocated to the social work of the Sacramental Brotherhood, which develops support programs for vulnerable individuals in the municipality. Last year, the campaign raised over 12,000 euros, which were used to assist families facing economic difficulties and to restore local heritage.
The setting of the Jardines del Conde, illuminated by the light of the stars, creates a unique atmosphere to enjoy the evening. The event will run until August 8, although there will be no service on Saturday, July 25, due to the celebration of the 51st Flamenco Festival “Ciudad de Tomares.”
