Gines to Host the XI National Ham Carving Competition on October 4

The competition will take place on Sunday, October 4 at 11:30 AM in the Una Pará tent in Gines. The top three finalists will receive the Gold, Silver, and Bronze Carriages.

Gastronomy once again takes centre stage at Una Pará in Gines 2026. The municipality will host the XI National Ham Carving Competition, an event that will be held on Sunday, October 4 at 11:30 AM in the tent set up within the exhibition grounds.

The competition aims to highlight the skill of professionals in carving ham and making the most of each part. An expert jury will be responsible for recognising the carver who demonstrates the greatest skill, style, creativity, and knowledge of ham culture.

Participants will be professional carvers previously selected and invited by the organisation. All will work with pieces of similar characteristics and weight, and must present three dishes: one from the knuckle, another from the shank, and another from the tip. Additionally, aspects such as style, presentation, and creativity will be evaluated.

The competition pays tribute to local carver Pablo Montiel, the driving force behind this initiative. As for the prizes, the top three finalists will receive the Gold, Silver, and Bronze Carriages, respectively. The winner will also receive a ham holder.

Trophies will also be awarded for the best plating, the best cutting accuracy, and the best creative free dish. The latter prize will include a professional knife along with the trophy.
